		<description>Oh how I miss snow days!  I think the entire time I was in college back east we had two...and that was setting a record!  Of course now that I, too, work at a college I get NO snow days ever because snow in Santa Cruz would probably be a tell-tale that the world was ending.  : )

Those muffins look fantastic!  I have a weakness for muffins...my absolute favorite is the Tri-Berry Muffin from Ina Garten...it&#039;s my Go-To.  I even reworked them to become Vegan for some co-workers for Christmas.  THAT was an adventure because I am one of the most non-vegan eating people around!

I ended up just scraping it all off and browning the chicken.  It was pretty disappointing.   I make something similar and I usually bake it.  So if anything I&#039;d bake the chicken if you decide to try it.  In addition, dredging the chicken in flour before the egg wash makes a complete and total mess.  I would recommend  just dipping the chicken in the wash first, skip the flour, and finally cover the chicken in bread crumbs and parm.   I pretty much cursed Ina Garten last night.</description>
