I think the entire time I was in college back east we had two...and that was setting a record! Of course now that I, too, work at a college I get NO snow days ever because snow in Santa Cruz would probably be a tell-tale that the world was ending. : ) Those muffins look fantastic! I have a weakness for muffins...my absolute favorite is the Tri-Berry Muffin from Ina Garten...it's my Go-To. I even reworked them to become Vegan for some co-workers for Christmas. No pointers from me. I burned the hell out of the coating and then the topping completely flaked off. I ended up just scraping it all off and browning the chicken. It was pretty disappointing. I make something similar and I usually bake it. So if anything I'd bake the chicken if you decide to try it. In addition, dredging the chicken in flour before the egg wash makes a complete and total mess. I would recommend just dipping the chicken in the wash first, skip the flour, and finally cover the chicken in bread crumbs and parm. I pretty much cursed Ina Garten last night.
