Comforting Curry
Curry and I are becoming quite the “BFF’s.” I suppose it was inevitable, what with my new found love for all things spicy. This Chicken Curry Pot Pie came out of the oven warm, hearty, and creamy. The veggies stayed crisp and the puff pastry melts in your mouth. Oh boy do I love pastry dough! I did have a little problem trying to figure out how to layer the pastry on top of the chicken filling. Finally, I decided to keep it simple and just folded the entire sheet and placed it on top. Next time, especially if I have company over, I’ll probably try to be a little more artful in my presentation.

Add Flour & Curry |
Cook for 1-2 Minutes |
Wisk; Cook Until Bubbly |
Mix Chicken & Veggies |
Pour Into Baking Dish |

looks great! i love curry but never thought of making a curry pot pie. i bet the pastry dough is much better than rice!

Oh, Erin, I need you more than ever now. Marc just layed out on me the fact that I am now assigned cooking dinner 5 out of the 7 nights every week. I guess because I’m a full time Mommy this is part of the job description - but I am terrified! I think mostly of the “planning a weeks worth of meals and then shopping for the ingredients” part. I guess I need to start an easy-recipies box or something online. Grrrr! I did make Giada’s stuffed shells tonight and they turned out pretty good!

Don’t freak out! I still struggle with planning weekly shopping trips. I tend to only cook maybe 3 meals a week now. Then some nights we eat leftovers and on others I make something simple like baked tortellini (throw it in a baking dish, cover with sauce and bake until done — then top with fresh parm).
Definitely start watching the foodnetwork. It will give you tons of ideas. I used to get intimidated by the number of ingredients that recipes had but that will go away. Another great site for quick recipes is http://www.kraftfoods.com
