“Re-dunk-u-lous” Peach Muffins

It has come to my attention recently that there literally dozens of foods that I was too stubborn to try growing up that have now been elevated to weekly staple status in my kitchen. When I think about how long I went without enjoying delicious ingredients like avocados, sweet potatoes, artichokes, and even mushrooms I get so annoyed with myself. Tastes definitely change as you age, and things you found intimidating that you labeled “icky” at the age of 7 might actually be quite amazing if you give them another try now.
Peaches were another item on my perpetual “do not eat” list. I had cultivated a completely absurd notion that peaches were disgusting when I was a kid (essentially this means that they weren’t bananas and therefore I wouldn’t touch them) so I never bothered buying them. Ever. I actually think I finally realized that peaches were pretty awesome after CK’s grandmother served some to me cut-up as a side dish at breakfast a few years ago. Initially I was just trying to be polite when I ate them, but then a little light bulb went off in my head and I thought, “Oh my God. These are scrumptious!” And promptly shoveled some more into my face.
In addition, If I’d never learned that I liked peaches I wouldn’t have bought this hilarious peach with a beak last summer at Russell Orchards on the way home from Crane Beach in Ipswich. It’s seriously one of my favorite photos ever (even though I took it on the iPhone). So have you had any food awakenings over the years? I can’t be the only former plain pizza eating Miss Priss on the block.

PS: This muffin recipe is excellent, but you don’t have to take my word for it. CK’s co-workers called them “Re-dunk-u-lous.”
Fresh Peach and Oat Muffins

Makes 12 muffins
1 1/3 cups rolled oats
1 1/3 cups buttermilk
1 large egg, lightly beaten
1/3 cup melted butter or vegetable oil
1/2 cup plus 1 tablespoon light brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
12 oz. almost ripe peaches, rinsed, pitted, and flesh cut into large chunks
Preheat the oven to 425ºF. Put the rolled oats and the buttermilk in a large bowl and let soak for 10 minutes. Add the lightly beaten egg, melted butter or vegetable oil, and sugar and mix well.
Sift the flour, baking powder, baking soda, and spices onto the soaked oat mixture and stir briefly. Quickly fold in the chopped peaches. Do not beat or over mix; the batter should look slightly streaky. Spoon the mixture into the prepared muffin pan, filling each cup about two-thirds full.
Bake for about 20 minutes until golden brown and firm to the touch. Let cool in the pan for 1 minute, then turn out onto a wire rack. Eat warm, immediately or within 24 hours. When thoroughly cooled, the muffins can be wrapped then frozen for up to 1 month.

Welcome to peaches!! They’re one of my favorite things about summer. Nectarines too - love ‘em!
I’ve recently been introduced to beets. I didn’t grow up eating them, as my dad strongly dislikes them. They’re not too bad, it turns out! I haven’t actually roasted any myself yet, but if they’re in a salad bar I won’t pass them by anymore

I used to dislike peaches because they’re fuzzy and actually up until last year I didn’t like nectarines. I don’t know why. Maybe because I ate them as a kid and got sick of them, but now I can’t get enough! Anyway your muffins look most delicious and so cute.

definately agree on the beets!! brussel sprouts always disgusted me, too. I don’t love those as much as beets, but at least they’re passabe
I went through alot of phases as a kid… i continue to amaze my mother telling her what i’m cooking and eating now!!

I used to hate peaches, too…but I love peach cobbler, peach pie and peach coffee cake with a crumb topping! The muffins look yum. I can’t stomach a fresh peach, it’s the fuzzy factor or the whole “stone fruit” concept nor can I stand peach “flavored” things like peach liqueur. Must have had a bad fuzzy navel when I was 19 or something.
Beets…ewww…David likes to torment me, once in a while he’ll yell “BEEEETS” and crack open a can and eat them straight-away. Then of course leave the un-eaten beets and beet juice for me to clean up. Oh the smell. gag!

Mmmmm, have marked this on my del.icious favourites. Just one question…should we peel the peaches first or leave the fuzzy skin on? I suppose it might work either way?

I was the worst as a kid. I wouldn’t eat things like cheese and rice and any kind of fish or mushrooms and lots more. And the worst was tomatoes! I still don’t think much of mushrooms but a few years ago I discovered the delicious tomato and now I love it:)

Pretty much HALF of what I eat now I wouldn’t eat then. Tomato! For the love of food - TOMATO - didn’t touch them then. Now I also eat avacado, asparagus, uncooked spinach, plums, most fish, salads of all sorts - a LOT of stuff. I still won’t touch beets or liver. And I eat much LESS red meat than I did growing up. Aside from the occaisional burger or steak - not really interested.
Those muffins look DELICIOUS.

peaches are such a treat, though i rarely got to eat them growing up in alaska.
i have always been a pretty good eater, eating anything mom put on my plate (except for liver and nobody likes that). i find as i get older, however, i have less tolerance for foods i used to be ok with. ref: cantaloupe, broccoli and brussels sprouts to name a few.

I too have a couple of childhood “ickies” I have happily changed my tune over.
The funniest one being of course coffee. I hated coffee with such a passion growing up the very smell of my parents’ morning brew was enough to send me into a fit of over-dramatic faux-gaggery. It wasn’t until the ripe old age of nineteen, when I began to serve and sell the stuff, that I awakened the caffeinated beast within, which, thanks to years of hard bred addiction, is now a tantrum throwing headache tyrant if I get to four in the afternoon without my usual “cuppa”.
You are officially my new favorite food blog erin, and you should come to salem, next time you’re venturing to crane’s beach, I’m scarcely a hop let alone a skip or anything close to a jump away.
